Description
Beef tongue is a working muscle, dense and firm when raw. Cooked properly it turns soft and rich, with a depth of beef flavor that no steak cut has.
This one is American Wagyu, so there is more fat running through it than in a standard tongue. That fat is what makes the difference over a long cook.
Simmer or braise it for several hours, until a knife goes in with no resistance. Let it cool a little, peel the outer skin off while it is still warm, then slice it. A quick sear after slicing gives you crisp edges.
Salt. This is the cut for lengua tacos, with onion, cilantro and lime.

- 30 to 60 miles. $29.99. $200 minimum order. Next day.
Free delivery on any order over $200 within 20 miles. Past 20 miles the delivery fee applies.
