Ribeye steaks, from Angus to A5 Wagyu

The ribeye comes from ribs 6 through 12. That part of the animal does almost no work, so it carries the most fat through the muscle. All that marbling is why the ribeye is the easiest steak to cook well, and why most people name it as their favorite.

We carry ribeye in every grade and origin we sell, from our store in Hallandale Beach, Florida.

Which ribeye should you buy?

• USDA Prime Angus. The American standard. About 10.5% of US fed cattle graded Prime in 2024. Heavy marbling and clean beef flavor. We sell it in 14oz and 20oz, bone-in or boneless, and dry-aged 45 days.
• Australian Prime Angus. The top Angus we bring in from Australia, picked for heavy marbling. Australia grades on the MSA star system rather than the USDA scale. It is the ribeye we sell the most of online.
• Australian Wagyu, marble score 4-5 up to 8-9. The AUS-MEAT marble score runs from 0 to 9. At 8-9 there is so much fat through the muscle that most people eat a smaller piece.
• Uruguayan Black Angus and 100% grass-fed. Leaner and firmer, with a real grass-fed depth. The grass-fed cuts are USDA Organic and Certified Regenerative.
• Japanese A5 Wagyu, Miyazaki and Hokkaido. Japan grades on yield from A to C and quality from 1 to 5. A5 is the top of both. Very rich. Serve small pieces and sear them quickly.

What is a ribeye cap?

The ribeye cap, or spinalis dorsi, is the curved muscle that wraps around the outside of the ribeye. It is the most marbled and most tender part of the steak. There is only a small amount on each animal, so it is rarely sold on its own. We carry it as an Australian Wagyu marble score 8-9 cut when we can get it.

Bone-in or boneless?

Bone-in cooks a little slower near the bone, and many people find it juicier. Boneless is easier to portion and cooks more evenly.

Dry-aging for 45 days concentrates the flavor and gives the meat a nutty finish. Bone-in cuts carry that especially well.
