Argentine and Uruguayan beef in South Florida

Campo Meat is a specialty meat store in Hallandale Beach, Florida. We opened in 2019, and South American beef is where we started. Argentine Angus and Uruguayan Black Angus are still the cuts our customers buy every week.

Most meat shops in South Florida sell USDA Prime and Australian Wagyu. Very few sell real Argentine and Uruguayan beef. Fewer still carry the cuts that people who grew up with this beef actually want.

The cuts that matter

Outside skirt (entraña) is what Argentine parrillas are built on. Thin, with a wide open grain, and it cooks in minutes.

Flap meat (vacío) is the other classic. Thicker, with a fat seam running through it, and it holds up to a long slow cook over embers.

Picanha is the rump cap. In Argentina it goes by tapa de cuadril, and the cut belongs to Brazilian churrasco more than to the Argentine asado. Ours is Argentine Angus, and it is the cut we sell the most of online. The fat cap on top melts down through the meat as it cooks.

We also carry tri-tip (colita de cuadril), whole tenderloin (lomo), Argentine style chorizo, and morcilla.

What is the difference between Argentine and Uruguayan beef?

Argentine Angus is lean, with a strong beef flavor and a firm bite. It holds up well on a hot grill.

Our Uruguayan beef covers more ground. Black Angus grain-finished for 90 or 200 days has more marbling and a softer bite. Our 100% grass-fed Uruguayan cuts are USDA Organic and Certified Regenerative. They are leaner and firmer, with a cleaner taste.

In 2006 Uruguay became the first country in the world to require traceability on every head of cattle. Every animal is tagged and tracked from birth, and any cut can be traced back to the farm it came from.

How to cook it

Outside skirt needs a very hot grill and it cooks in minutes. Take it off while it is still pink, rest it, then slice against the grain.

Picanha is best roasted whole with the fat cap scored, or cut into thick steaks and grilled fat side down first. Keep it medium rare.

Salt these heavily with coarse salt. Chimichurri goes beside the meat, not on it, and bread on the table.
