Description
Outside skirt, or entraña, is one of the cuts an Argentine asado is built on. Thin, with a wide open grain, and that is where the flavor comes from. It takes a char better than almost any other cut.
Very hot grill, and it cooks in minutes. Take it off while it is still pink, let it rest, then slice across the grain. Cutting it the wrong way turns a tender steak tough.
Salt it heavily with coarse salt. Chimichurri on the side, not on top, and bread to go with it.
It also makes very good fajitas and steak tacos.
