Description
Outside skirt from Abatti Ranch American Wagyu. American Wagyu crosses Japanese Wagyu genetics with American cattle, which puts more fat through the muscle than a standard skirt steak carries.
That fat is why it stays soft even cooked hard and fast. Very hot grill or pan, and it cooks in minutes. Take it off while it is still pink, rest it, then slice across the grain.
Coarse salt, and plenty of it. Chimichurri on the side.
Rich enough that a smaller piece goes further than it would with a standard skirt.
About the marbling
- Crossbred wagyu over Angus, raised on US farms. The score is the producer's own; the United States has no official wagyu grade.
