Description
The short rib plate is the whole slab, cut from the belly side of the ribs with the bones left in. It comes from one of the most worked parts of the animal, which is why it needs time.
Australian Prime Angus is heavily marbled, and on a cut like this the fat is doing a job. It renders through the meat over a long cook and keeps it from going dry.
This is not a quick cook. Braise it low in liquid, or smoke it, until the meat pulls away from the bone. Hours, not minutes.
Salt and pepper before it goes on. That is all a cut like this needs.
