Description
Outside skirt is the diaphragm muscle. It has a wide open grain running across the steak, which is why it takes on flavor so well and why it has to be sliced the right way.
This one is Australian Wagyu, so there is far more fat through the grain than in a standard skirt. It stays juicy where a leaner skirt would tighten up.
Very hot grill, and it cooks in minutes. Take it off while it is still pink, rest it, then slice across the grain. Slice it the wrong way and it turns chewy.
Salt it heavily with coarse salt. Chimichurri beside it, not on it. Do not marinate this one, there is nothing to gain.
How Australia scores marbling
- Wagyu fat melts at a lower temperature than fat on other cattle, so a well marbled cut eats richer than the same score on another breed.
