Description
Australian Wagyu ribeye at BMS 6-7. The fat runs through the muscle in fine lines, more than you get in Prime Angus and short of the heaviest Wagyu scores.
That middle ground is the point. It eats rich and soft, and you can still finish a full steak instead of sharing a small piece.
Sear it hot and fast, or grill it over high heat. Rare to medium rare, then rest it before you cut.
Salt only. At this marble score a sauce fights the meat.
How Australia scores marbling
- Wagyu fat melts at a lower temperature than fat on other cattle, so a well marbled cut eats richer than the same score on another breed.
