Description
Argentine style chimichurri from Beef & Love, made with avocado oil instead of olive oil. Avocado oil has a milder taste of its own, so the herbs and the chili come through first.
Chimichurri is a condiment, not a marinade. In Argentina it sits on the table beside the meat and people spoon it onto their own plate. Used as a marinade it does nothing for good beef and wastes the sauce, because the herbs burn on the grill.
Spoon it over grilled beef after it is cut, or put it on the table in a bowl. It also works on grilled chicken, on fish, on roasted vegetables, and on bread.
Keep it refrigerated.
