Description
Australian Wagyu ground at 80/20, which means twenty percent fat, taken from the chuck. The chuck is where the flavor is in a grind, and 80/20 is the ratio burgers want.
Wagyu puts more fat through the mix than a standard grind, and it is softer fat. You notice it most in a burger, where it keeps the patty moist, and in anything slow cooked, where it enriches the sauce.
For burgers, form the patties loosely and do not compact them. Hot surface, press once to set the crust, turn once. For a sauce or a chili, brown it hard in batches so it colours instead of steaming.
Salt the outside of a patty just before it cooks, not into the mix. For a sauce, salt as you go.
