American ground lamb, freshly ground, with enough fat through it to stay juicy.
Lamb has a deeper, slightly earthy flavor than beef. In a grind that comes through strongly, which is why ground lamb carries spice better than ground beef does, and why most of the dishes built on it are heavily spiced.
Brown it hard in a hot pan. For kofta, mix the spices through the meat and let it sit an hour before shaping, so the flavors settle. For a sauce, brown it first and build the sauce on top.
Cumin, coriander, garlic, mint, paprika. This is the meat for kofta, for spiced rice, and for anything Greek, Turkish or Lebanese.
