Description
These patties are Black Angus beef blended with Japanese A5 Wagyu fat. The lean comes from the Angus, the fat comes from the A5.
That combination is the whole point. A5 fat melts at a much lower temperature than ordinary beef fat, so it softens into the patty as it cooks instead of rendering out and dripping away. You get Angus beef flavor carried by a richness that Angus fat cannot produce on its own.
Hot pan or hot grill. Press it once at the start to set the crust, then leave it and turn it once. Do not press it again, and do not cook it slowly. Low heat gives that fat time to run out of the patty, which is the thing you are paying to keep in it.
Salt the outside just before it cooks, never into the mix. A plain bun, and nothing loud on top.
