Description
The NY strip is one muscle, edge to edge, with a strip of fat along one side. Firmer than a ribeye and cleaner tasting, which is why a lot of people prefer it.
Center-cut means the ends are trimmed off, so every steak is the same thickness and cooks evenly.
Australian Prime Angus, the top Angus we bring in from Australia, picked for marbling. It is the steak we sell the most of online.
Hot grill or hot pan. Stand it on the fat edge first to render that strip, then lay it flat. Medium rare, and rest it before you cut.
Salt and pepper, which is the convention for this cut. Salt it well ahead or right before it goes on the heat, never in between.

- 20 to 30 miles. $19.99. $150 minimum order. Same day on orders placed before 2:00 PM, next day after that.
- 30 to 60 miles. $29.99. $200 minimum order. Next day.
Free delivery on any order over $200 within 20 miles. Past 20 miles the delivery fee applies.
