Description
Outside skirt is the diaphragm muscle. It has a wide open grain running across the steak, and it is thin, so it cooks faster than almost anything else in the case.
USDA Prime marbling on a skirt puts fine fat through that open grain. Strong beef flavor, and it stays juicy where a leaner skirt would tighten up.
Very hot grill, and it cooks in minutes. Take it off while it is still pink, rest it, then slice across the grain. Slice it the wrong way and it turns chewy.
Salt it heavily with coarse salt. Chimichurri beside it, not on it, and bread on the table.
