Description
A bone-in veal rib chop, cut thick with the bone left long. It is the veal equivalent of a tomahawk, from the same part of the animal.
Veal is milder and paler than beef, with a fine texture and very little fat. That makes it delicate, and it also makes it unforgiving, because there is nothing in it to save you if you take it too far.
Sear it hard in hot cast iron on both sides, then finish it over lower heat or in the oven. Medium, and no further. Veal dries out fast. Rest it before you cut.
Salt and pepper. Finish it with butter, garlic and sage spooned over it in the pan, and a squeeze of lemon at the end.
