Description
Whole young rabbit, raised in the United States. It comes as one whole animal, ready to break down or to cook as it is.
The meat is lean and pale, closer to chicken than to game, with a mild flavor and a soft texture. There is almost no fat on it, so it dries out quickly if you cook it hard.
Roast it whole with herbs and plenty of fat in the pan, or joint it and braise it slowly in liquid. Braising is the safer route if you have not cooked rabbit before.
Salt, garlic, and rosemary or thyme. Mustard and white wine is the classic braise.

- 20 to 30 miles. $19.99. $150 minimum order. Same day on orders placed before 2:00 PM, next day after that.
- 30 to 60 miles. $29.99. $200 minimum order. Next day.
Free delivery on any order over $200 within 20 miles. Past 20 miles the delivery fee applies.
