Description
NY strip from Miyazaki prefecture in Japan, graded A5, the top of both the yield and the quality scale.
The strip is one clean muscle from the short loin, firmer than a ribeye and with a more even grain. In A5 that structure works in your favor, because it gives the steak something to hold onto under all that fat.
Very hot pan, a short sear on each side, and off. Rare. Let it rest a moment, then slice it thin.
A little salt, and nothing else. Serve it in small pieces rather than as a whole steak.
How Japan grades this
- A5 is two grades at once. The letter is yield, the number is quality, and both are at their maximum. The letter has nothing to do with marbling.
- Serve it in smaller portions than a steak of another breed.

- 30 to 60 miles. $29.99. $200 minimum order. Next day.
