Description
Ribeye from Uruguay, 100% grass-fed and never grain-finished. The cattle graze on open pasture their whole lives.
Grass-fed beef eats differently from grain-fed. It is leaner, the bite is firmer, and the flavor is cleaner with a clear grass note behind it. If you are used to a Prime ribeye, this will taste less rich and more like beef.
Because it is lean it cooks faster and dries out faster. Grill it hot or sear it in cast iron, keep it rare to medium rare, and pull it earlier than you would a grain-fed steak.
Coarse salt. Chimichurri beside it, or a little herb butter at the end.
This ribeye is Certified Regenerative, which means it comes from farms that graze cattle in a way that rebuilds the soil rather than wearing it down. It is also USDA Organic.
Where this comes from
- Every animal traces back to the farm it came from. Uruguay has required individual cattle traceability since 2006, across the whole national herd.

- 30 to 60 miles. $29.99. $200 minimum order. Next day.
