Description
Tri-tip is a triangular roast from the bottom sirloin. It is leaner than a ribeye and has a firmer bite, with a strong beef flavor of its own.
This one is Abatti Ranch American Wagyu at BMS 8-9. That much marbling on a lean cut is unusual, and it changes how the tri-tip eats. It keeps the chew that people buy tri-tip for while staying juicy through the middle.
Sear it hard, then finish it over lower heat. Medium rare. Rest it, then find where the grain changes direction partway along the roast and slice across it in both directions.
Salt it heavily with coarse salt. Chimichurri beside it.
About the marbling
- Crossbred wagyu over Angus, raised on US farms. The score is the producer's own; the United States has no official wagyu grade.
