The Australian Wagyu Ribeye Cap (BMS 8–9) is the most prized and flavorful part of the ribeye, also known as the spinalis dorsi. This outer cap wraps around the ribeye and is known for its incredible softness and heavy marbling. As it cooks, the fat slowly melts, creating a buttery, juicy bite with deep beef flavor and a tender texture that almost melts in your mouth.
Only a small amount of ribeye cap comes from each animal, and finding it in Wagyu grade is rare. Because of its limited supply and exceptional eating experience, Wagyu ribeye cap is one of the most sought-after cuts by chefs and serious meat lovers.
