Description
Marrow bones split lengthwise so the marrow is exposed along the whole bone. Canoe cut is the name for that split. From American Black Angus.
Roasted marrow is soft and rich, closer to butter than to meat, with a deep savoury flavor. It is a classic first course in Argentina and across Europe.
Roast them in a hot oven, cut side up, until the marrow is soft and bubbling at the edges and starting to pull away from the bone. Watch them, because past that point the marrow renders out and you lose it. Scoop it straight from the bone while it is hot.
Coarse salt and something acidic. Toasted bread underneath, and a sharp parsley salad or a squeeze of lemon to cut the richness.
